I have not made these changes on the Rocket yet but I have on other makes of motorcycles. Changing pistons will not changes sound much and cams only a little. Just MO.
I am waiting till after the RAA East before changing my bike up. I want to meet some folks in person and hear their machines. I find it difficult to asses sound on the videos off the web.

I have wrestled with going beyond the 200 RWHP for 5 years.
My stock engine with RamAir, CES & a super tuner (Nels Byersdorf) gives me 160 RWHP and runs so darn well I get most of what I need.

I just can not get off the fence and pull the trigger.
However, the itch for 225 or more RWHP to enjoy fun with the occasional highway pulls versus other bikes or drag racing stays with me . . .

Twas after I got this motor in 2012 that this aggrivating itch began, but I reckoned it would dissipate after some easy mods considering my age was already pretty much up there.

So far, at 71.5 years, that damm itch remains and I'm still waiting to grow up!

PS: I think mine has one of the best sounds of the Rockets I've heard . . . you'll hear it at RAA East in May.
