This is my set up when i'm carrying a lot of bulk and weight.
It's narrower than having panniers and in essence it's just one huge bag and three simple straps.
Aerodynamics seems to be fine as is the handling. I'm happy with this set up. Works for me.

The bag is secured using the two brightly coloured straps. For added security, the straps pass through the carrying straps on the bag.
The main trick that i've done with my set up is that i've bolted a piece of 12mm thick plywood to my rack. I have used wing nuts, so the board is easy to remove when I don't want it to be on the bike.
The board is almost the same width (and depth) as the bag so the bottom of the bag is fully supported & it can't sag on either side of the rack. The straps go around the board, not the rack.

I like the bag setup. It's very clean although It's almost as wide as your license plate/Billboard.:p

I set mine up for for touring capability for similar reasons.
Already had the panniers and back rest but added this Legend bag from SW-Mototech.
This gives another 48L capacity and straps down easily - but I think you'd need to add the pannier brackets at least to do this.
Adding the back rest (I have the GT version) adds more security.
In terms of long distance journeys / touring I've no doubt the Rocket will give you a great ride!

I had my own custom racks fabricate as I didn’t like the factory ones.
I'd like to see more photos of how you're mounting those burly bags to your custom side racks. looking at their website it appears that you're using the "throw over" model. Are you just using the two loops on the racks to attach to the bags? Inquiring minds want to know.....
