Eric, is your smoker bigger than that barrel smoker I brought to Leakey? If so, that would probably work better since there will be so many people.
I plan on bringing about 4 racks of ribs & will have them drowned in dry rub for a few days
And various other things................. @Steel can you bring some more o'dat boudin?

it's one of the brinkman barrel types... 2 levels of grill, maybe 18inches each...
