In my case I think it was the clutch not being set correctly, therefore when I pulled it in to slow down and stop - I was probably still in first hence the stall.
With the throttle cables I noticed that I had the throttle on cable too slack - therefor I could have stalled because I put the bike in gear but didn't have enough throttle to start off - (I caught this problem and gave it more wrist action).
Therefore I was making adjustments on the fly, but managed to get them running ok.
Not sure which cables you moved - but it could be the cause
