My experience is that a big header and an open exhaust won´t help that much with a stock bike.
There can be some gain, but usually nothing really serious.
If you add some high lift long opening camshafts it is a different game.
Penner who is offering cams for the 2.5L bikes ? Working on getting more HP out of a 2021 GT to go back to Bonneville Salt Flats in 2025 for another record run. I messaged Neville Lush about cams. He said he has decided not to develop cams for the 2.5 L bikes.

I rode few days ago with (new map) with 10% fuel and it was noticeable difference in power,
I ordered stuff for street tuning rocket which I will install during winter months and then fine tune it with Data from Tuneecu App + Data from Kit (photo below) I ordered when weather gets better next year.
Yes, that would work or ideally on the same dyno on the same day or close to the same time, so you can get a lot more data and have the results with fewer variables.
I have just seen a dyno run with a Paul Bryant header and exhaúst that made a good 40hp gain over stock.
It was an unrestrited map and AFR adjusted. As you usually get about 30hp with just an unrestricted map it is about another 10hp with it.
And the engine was otherwise stock.
