What RPMS do you run while cruising? Most Fuel Efficient?

Coming from a Bonneville and adding a Rocket to the garage I have learned that I am in need of developing throttle hand discipline

Triumph states at 56 mph you should get 44.7 mpg but at 75 you only get 35.9 mpg. A significant drop. This is constant speed, I'm sure on a flat, on a Roadster
 
I have always found that there is a JUMP in consumption somewhere between 3000 and 3500 rpms. Last week I caught the jump by using earplugs (with gunfire filters) - 3200 the engine note changes appreciable - and on very light throttle. There is another close to 4000.
 
Can anyone guess I spent 23 years in the Australian Bureau of Statistics?

Not having a GPS speedo or riding my bike as I type could somebody confirm what the actual RPM per Kmh is in top gear? This is also affected by the angle of observation of the analog RPM and speed gauges

2355 RPM @ 65Mph (104.60Kph) = 22.5143 RPM/Kph with Bridgestone Exedra EA1R 240/55-16

2445 RPM @ 65Mph (104.60Kph) = 23.3793 RPM/Kph with Stock tire AVON COBRA AV72 240/50-16 (84V)
Theoretical top speed @7000RPM = 311

Theoretical top speed @7000RPM = 299

These figures would be affected by different rolling circumference of rear tire with variation even possible for same nominal size and profile rated tires. Dark side options would vary even more.

Looks like our speedos (speedometers, not swimming trunks) read a bit low, which is odd...most motorcycle speedos read high....those of us going to the 55 aspect ratio rear tire should be careful not to get caught speeding! Not that any of us would ever speed on this bike...
