I have done this type of special event shirt thingy many, many times and always the old way that you suggest.
After all the effort to take orders, names, sizes, quantities and keep track of them, and then to deal with the delayed order changes . . . tis a real PITA!
Other than Teespring screwing up the shirt designs last year, I felt the individual ordering through them worked great and saved a lot of hassle.
I am currently in contact with three other companies. If they can do the same and NOT screw up the design, I think it's a go.
I shall keep everybody posted up to date on the progress.

Using your logos, I don't know where I'd place all the other info.
