Bull...based on past experience I love hanging out with the large group when the riding is done, but count me out for any of the 20+ bike groups...too hard to keep everybody together, on schedule, etc. You may want to just lay out the ride routes and let the groups sort themselves out on any given day

We all ride all the time; so, it seems to me the paramount thing is the meet and greet of friends with a common interest. That's why I thought Monday could be an R&R hang out day.
Naturally, all the day rides are optional and folks can ride or chill as much as they wish. I envision a short rider's meet before each day ride, say 8:30 AM to sort out the group(s) and then have kicks up at 9 AM.
As I mentioned, if the day ride group is large we should split up into smaller groups no more than 10 so the leader can keep track of the riders and not lose anyone.
Requesting folks to put themselves in a group with a comfy riding speed also helps keep things together. The leader making sure no one is lost at all intersection turns is also important.
