Newbee performance question?

I just purchased a 2017 totally stock triumph rocket. I noticed today while cruising 60 miles an hour the RPM was 2500 RPM. My Harley friends and other bike friends like to do roll-on’s from 60 or 70 miles an hour up. I’m kind of new to the horsepower versus torque performance on these bikes. My question is if I was going to do a roll-on from say 65 is it better to just accelerate in fifth gear or down shift into fourth or even third to get more RPM to take on these other bikes?
my 07 runs 60 mph at 2000 plus minus rpms 60 to 80 no downshifts gets there pretty quick
 
Yes it would be interesting to see say at 70 miles an hour a roll-on in fifth gear versus fourth gear which one pulls the best and fastest!
The reason I am asking by the way is I have two friends one with a brand new CVO Harley and aNother with a brand new Gold Wing and I know they’re going to want to do to roll-on from 60 or 70 to try to beat me so I want the best geat possible.

A couple lower speed burn outs and they won't even try :)

I have a buddy with a 2017 CVO with a stage 3 and I walk a away from him without trying. He gave up trying to play games with me at the traffic lights after a few feeble attempts. I recall a couple of his tries, hammering on the throttle, making all kinds of noise.

My ride got 400 miles on it now is all and it seems like it’s getting better and quicker.
 
If ya want a little fun, there's plenty left with a downshift into 3rd followed by a grease of the wick from 60 mph or so!
