The brake controller should have instructions on how to set up the brakes. On mine it was to get the brakes warmed up first and then drive at 10 km/h and adjust the controller until the brakes just start locking up.
 
Your limiting factor is the load Range B tires at 780 lb each for a total load capacity of 1560 lbs since both the rims and axle are rated higher. You should be fine capacity wise with your set up, providing the trailer brakes/ rocket will stop that load
 
Did you reweigh? Only 1 tire splitting on scale? just do not let tire pressure drop any and i too think you are ok even though its alot of weight for the rocket to stop, handle, and next ser of tires get the most ply you can. Either way take it slow and easy, other words no more normal because you ride like a hooligan im just saying. Godspeed brutha and remember Nashville is a haven for you.

    My cargo load is at 340lbs for 900lbs total and I’m rolling out with that..

If you weighed that separately total weight will be 1000 lbs, if that is of any importance
 

You could always unhitch the camper and lock the hitch point and ride to the tire shop. You could also but one of these as a jack too.
