Quick wipe over with VERY fine wet'n'dry will keep it matte.

I use "Mothers Chrome Polish" on the shiny stuff. I've lost count of the people that have commented how much they like the contrast with the chrome on flat. As far as the flat black, I only use "Windex" and a regular towel. It's cheap and a good soaking will get the bugs off without adding any shine OR film. I can even blend the spots on the rear fender (where the rubber stand-offs touch) when I take off the pee pad to ride 1-up.
