I also want to do a custom single or 3 into 2 exhaust. It's probably the one thing I don't like it's the 2 right and one left side mufflers. Does anyone know if a roaster or touring exhaust will retrofit? Or a nice looking 3 to 2 or 3 to 1 aftermarket exhaust?

There are several efforts afoot to design a decent header that will wake up your bike. Aftermarket for these bikes sux, but that ain't all bad...what you can get is usually custom made by somebody that rides one which makes them unique
