Broken foot

I'm the same height as you. I have a 35" inseam.
I tried the stock GT set up before I bought my Rocket. I didn't like the peg geometry because I felt like my feet were slipping off them. I kept having to pull my feet inward.
The set up I have is GT seat, mid controls & GT handle bars. It's not a set up that I would have thought as being the one to go for, but having tried it on a bike at the dealer I was won over.
The trick is to sit well back in the seat and use the raised rear form of the seat to support your pelvis. I haven't suffered from any back pain or shoulder/neck pain on long rides. I thought I would have done. It has surprised me how good the geometry is.
I gives good control in city riding and is great at progressive speeds on very twisty hilly roads. Way more comfortable on bumpy roads. Cruises nicely, but not all that comfortable on long motorway journeys above 70mph.

Thanks,I better look into mid mounts. As long as toe of my boot doesnt hang below scraper on pegs.

poor bike
I'm 5'8"

Try the mid controls for sure. Size 13 boots did not play well with the forwards for me either. Not one problem with the mids. Well besides those stubby little pegs, lol.

mid mounts also fixes boots/pegs scrapping and dramatically increase lean angle when installed in the highest position.

Sidenote: Floorboards IMO would essentially kill any lean angle...
I had the mid mounts higher setting put on right after I purchased the GT. I just lean hard and always have. At this point I would sacrifice the lean angle because I could still hit the pegs I would just have to lift my feet off the pegs like I do at times anyway. I choose comfort now and those tiny pegs bother me. Around town they are fine but after 150 or so miles they start to get annoying. I'm with you on the Floorboards but like the pegs they are on a spring so they bend up also. Just don't have your feet on them when they do.
