I actually have the same harbor freight engine hoist as yours, this time i just put 2 straps to rafters and thats it.
 
I've found it easiest to use the engine crane side on the bike and use an atv jack under the engine. I lift the whole lot, bring the atv jack up to meet the sump, loosen the engine mounts and then drop the engine from the frame. I use adjustable straps on the crane so I can tilt the arse end of the frame up as the engine comes down....I also made this so don't question my methodology:

Some don't have the luxury of a big workshop, got a suntan taking my engine out last summer. I made a frame from Unistrut and metal conduit that was kicking around. Used a ratchet strap to lift it up. There is a motorcycle scizzor jack under the engine then I transferred the patient onto the stretcher to take into the ICU (the workshop). Did it on my own, was fairly easy, getting the patient onto the stretcher was the hardest part. I did remove the oil pressure sensor as advised by others, so when lifting the frame off it didn't break it. I'll probably have a couple of mates help for the re-fit though. Oh and I am going to get a garage built in the area I keep the Rocket. It's currently covered with tarp.

Good to go IMG_1161.JPG Back jack is in a good position. IMG_1154.JPG Front jack requires an addition of Six inches. That is not a problem for me. IMG_1176.JPG Am a freaking aircraft welder by trade. easy fix. Add Six inches drill a new hole. Weight is not issue. Clearance is important to keep floor jack in position. I wish to pull bike from engine and remove front wheel with frame in air. This way I can work on front forks while transmission is getting worked on. Plus I can Get top tree free and send all parts to get primo powder coating. Really liking this.
Sonny What welding do you do for the air frames. Oxy or Tig
 
All i could do is look at the pictures and laugh. Love the coffee cup fix. I do mean laugh in a good way. I may be overthinking this engine removal stuff.
Bush mechanic as they say in Aus :) My workshop is too small to fit the Rocket in. At least I'm working on the engine in the shop which is dry and warm. You've got a great setup and workshop Sonny. Good on ya.
