the most work an engine can do is at it's maximum power rpm so in Mittzy's bike that would be at 5700 rpm , torque is dropping but you are using a lower gear if you shift up before torque drop you are losing drive by going to a taller gear so you have to find the balance against leaving it in a lower gear while torque is dropping and losing drive against shifting up and losing drive ,that equilibrium is at max power rpm or may be a bit higher rpm say 6000 you are trying to keep engine at max power rpm because that's where the engine dose it's maximum work . hope that help's
Probably around 4300 rpm as the torque begins to taper off.
