From the center of the handlebar base measure straight back at level to the center of the plane of the outside of your hands. From there measure up to the same plane. Last measurement will be of the width between the outside of your hands while in your preferred position. From these 3 measurements, a proper rise, pull back and width for you cab be determined.

Welcome from Nashville, taller rear shocks may help, I ordered a set as stock are 12.5 and too short for me at 6’3”. 13.5 in shocks I ordered helped with handling but I ordered wrong as they are too tall for me but a set of 13.5 shocks may be good fit for you at 6’8”. Good luck, dial it in you got a hoss of a bike.

I modified the stock seat and pan to push me further back and get a bit lower. The crossbar under the seat really limits how far back you can go. I got rid of the bar that goes across and bolts the seat down on the sides and the seat is held in place with the single bolt at the rear. I had some custom bars and highway bars made after I was in an accident this last summer.
