Are we talking about the usual mechanical stand by Flipmeister? I have a competitor's product (Becker Technik out of Germany) that does the same thing in a slightly different way, and I can't imagine a way to get wheels off the bike when it's lifted just an inch or two in the air.
That's what the stand does - levers the bike onto the balance point and the two mounting holes there, leaving most of the weight on the stand.
Oil changes would be pretty ideal, sure, and other work where you need to get at the carbs or that side of the bike is easier when the bike is perfectly upright, but I doubt you can use it to take wheels off, at least if you want to drop the wheel out from under the bike.
I think this type of stand is best for lighter work and absolutely ideal for winter storage, but if you need to really work on the bike you may as well go with a hydraulic jack that lets you hoist it in the air. That should be possible to use to get wheels off, too, just need to find a way to make sure the bike doesn't tip forward or backward on the lift as you take that much weight off in one end.
