Engine cutting out under load

You don't say whether the SAI has been blanked or not, if you have the option to turn it off try that and some of your off throttle decel pop should clear up.
the option in the tune ecu software for SAI is greyed out so i'm guessing that it may already have been turned off, but i have been trying to figure out where are all the parts are on the bike for it and what needs to be removed and what needs to be blocked off, so far i have only found the information for the triumph thunderbird models.

I'm going to be following this one closely so any details you can provide of what find will be greatly appreciated. I have almost the identical issue except my power fluctuates when accelerating hard in 2nd and 3rd. Over the course of a few seconds it varies from ripping my arms out of their sockets to being fairly tame (A bit like riding a Harley I imagine 🤣). The issue isn't as noticeable in 1st and seems to go away in higher gears too, but the bike seems down on power generally in those gears. I get some change in engine note and some popping on decel but noting serious, my bike is also a standard roadster too though.

I'm going to start simple and start at the start with new plugs and tightening the coil connections then take it from there if the issue remains. There will be a lot of suggestions thrown at you over this one no doubt, but my two cents is start with the basics and go from there. I suspect I've either got a fluctuating quality of spark or the secondaries are doing whatever the hell they want so I think I'll move onto checking the TPS after all that.

check the throttle body balancing, tps, and icsv first, make sure they are all good, that may at least take care of part of your issues, then move onto spark plugs and coil wires, while the tank is up, i think it is easier bringing up the gas tank on the roadster then it is on the touring

All the plumbing can remain in place with no ill effect if the SAI has been deleted in the ECU. What deleting the function does is turn off power to open the SAI valve to admit fresh air into the exhaust stream to burn off unspent fuel (adding to decel pop). With the valve closed no air is admitted and your decel pop is limited to any over-lean conditions (usually at the last 6% of throttle).
