I once owned Backwoods BBQ and Ribs in Erwin until a nasty divorce. I have ribbons, plaques and trophies from competitive smoking of meats. Used to cater on site BBQ too. I like, love to cook. I just do it for fun and friends now. I make critically acclaimed ribs and mesquite brisket though. I would be happy too cook for this group anytime. Low country boils, fresh crab cakes, home made cobblers and pies. Dang I miss it.

Get the mates to pitch in and buy Josey a plane ticket.
I'm sure he will satisfy your curiosity.
Just by what little research I have read it seems that Aussies corn their brisket.
Look to the left of this image and you will find brisket.
We smoke ours for hours.
and my contract with life has a no compete clause... but i'll be more than happy to cook any time someone wants to eat (and i'll remember to bring some cast iron to make a cobbler, too...)... if we really plan ahead i can show y'all the secret to making fresh donuts for breakfast for a crowd...
